I’m back to blogging after a loooooongg break and I propose a healthier version of chocolate cake. I have been meaning to try a cake using jaggery for quite a long time.Somehow i kept putting it off as i was skeptical about the combination of chocolate and jaggery. I wasn’t convinced until i stumbled upon a recipe by ediblegarden. I slightly tweaked the recipe to suit my needs and the result was one healthy and yummy cake. Trust me, there was absolutely no hint of jaggery and one can never figure out unless told.

Eggless finger millet(ragi) chocolate cake
Required Ingredients:
- Wheat flour/Atta-1 1/4 cup
- Salt- A pinch
- Jaggery- 1 cup
- Unsweetened cocoa powder- 5 tbsp
- Vanilla essence-1/4 tsp
- Baking powder-1/2 tsp
- Egg-1
- Water-1/4 cup
- Chopped almonds-1/4 cup
- Butter(melted)-2 tbsp
Method:
Sieve wheat flour, salt and baking powder and mix well. Set aside.
In a bowl add 1/4 cup of hot water, cocoa powder and mix well.
Add butter, egg and whisk well. Add vanilla essence and mix well.
Now, mix 1 cup of powdered jaggery in water(1/3 cup ) and heat until it melts.
Let it cool and filter to remove impurities/sand if any.
Add the filtered jaggery to the chocolate-egg mixture and mix well.
Add the dry ingredients(wheat flour, salt and baking powder) to the wet ingredients and mix well.
Add chopped almonds and fold in gently. Reserve some chopped almonds for topping.
Grease a loaf pan or any cake tin with butter.
Pour the batter into it and sprinkle chopped almonds on the top.
Preheat a pressure cooker with 2 cups of water. Place a vessel filled with water onto it. Place a plate or over the water filled vessel. Now, place the loaf pan on the plate.
Cover the cooker with lid. Cook on high flame for 30 mins. Check by inserting a tooth pick/knife in the center. If it comes out sticky, cook on medium-low flame for 10-15 mins until the tooth pick comes out clean.
Let it cool completely. Run a knife through the edges and invert it onto a plate.
Slice and serve.
Notes:
- If you are using pure organic jaggery, you can add it as it is(powdered/grated) to the wet ingredients.
- Alter the amount of jaggery as per your liking.
- You can add choco chips for a more chocolate-y cake.

Yes I always make my cake with wheat flour and jaggery for healthier version.. Seems u too r like me n yes jaggery goes really well with chocolate n no one can find out that there’s jaggery in the cake 🙂 I always experiment with different things … Palm jaggery/sugar also gels well .. Add jaggery n honey to get a dark chocolate taste .. Hope this helps anyone 🙂
