Pineapple fried rice

I’m back to blogging after a short break. Hope everyone had a happy and safe Diwali. I have recipes piled up in my drafts awaiting to be published. So, let’s get to the post with no further delay.

Pineapple is one of my most favourite fruits. My most favourite way of eating it is, smearing it with red chilli powder. Thanks to road side food carts. From pineapple based salads to smoothies, there is N number of ways you can incorporate pineapples in your diet. Pineapples are a great source of vitamins and minerals. It is rich in Vitamin C and thus helps maintain a strong immune system. It is also good for your skin, teeth and bones.

Fried rice is a food that has gained huge popularity all over the world. It is as simple as tossing rice with stir fried vegetables and takes only a few minutes to make. Pineapple fried rice is Thai in origin. The recipe I’m sharing here is slightly tweaked and Indianised. Tangy-sweet pineapples combined with flavours of soy sauce and black pepper renders this dish a mildly sweet taste. Try making this fried rice when you find yourself bored with making the same old veg fried rice. I’m sure you would love it. Do try and let me know how it turned out for you.

Required Ingredients:

  • Pineapple cubes- 1 cup
  • Basmati rice(soaked and boiled)- 1 1/2 cup
  • Onion-1 medium finely chopped
  • Green chilli-2 finely chopped
  • Garlic-3 cloves
  • Soy sauce-1 tbsp
  • Green chilli/red chilli sauce-1 tsp
  • Black pepper powder-1 tsp
  • Salt- As required
  • Oil-As required
  • Cashwe nuts-5 to 7
  • Raisins-5 to 7
  • Coriander leaves-1 tbsp

Method:

Soak basmati rice in water for 20 minutes and either boil or pressure cook and set aside.

Heat oil in a kadai/wok, add finely chopped onions, green chillies and garlic cloves and fry until the onions get translucent.

Now, add chopped pineapple cubes and saute for 4-5 minutes.

Once the pineapples get cooked, add salt, green chilli sauce, soy sauce and saute.Add ghee fried cashews and raisins and mix well.

Now, add cooked basmati rice and mix/toss gently.

Add black pepper powder and mix well.

Garnish with chopped coriander leaves and serve hot.

Notes:

  • Increase or decrease the spice level according to your tolerance.
  • Cashews and raisins are purely optional.
  • You can use white pepper powder.
