Paneer is a form of unripened cheese popular in India and other parts of South Asia. Also known as Indian Cottage Cheese, Paneer is an excellent source of protein and therefore an ideal replacement for meat for Vegetarians. Those who wish to lose weight must definitely include paneer in their diets as it keeps hunger pangs at bay owing to its high satiety index. It is also a great source of calcium and helps build stronger bones and teeth. Though paneer has a high level of dietary fibers that boost metabolism and help in burning calories, there is still a debate over including paneer in fat burning foods as many believe it is calorific. So, moderation is the key. Paneer is widely used in indian vegetarian preparations. Paneer Butter Masala, Paneer tikka are some of the common and popular preparations usually served as a side for indian flat breads like rotis, naans and chapathis.
There are several ways to include paneer in your diet. You can incorporate paneer in salads if you are considering losing weight. I love paneer as much as I love chicken. I do not like frying paneer be it any dish and i like my paneer soft. Nothing like soft chunks of paneer that melt in your mouth. I love the combination of paneer and corn. It not only looks colourful and appealing to the eyes but also is super healthy. I always try to avoid deep-frying unless necessary. Plus its better to avoid frying paneer as it makes it even more calorific. I used paneer , corn kernels and potatoes to make the tikki. You can add grated carrots, green gram sprouts or any vegetable of your choice. It is a very simple and easy to make snack and is a great way to include paneer in the diets of kids who do not like milk.
- Paneer-200 gms
- Corn Kernels – 1/2 cup
- Onions -1 medium
- Green chillies-2
- Coriander Leaves-1/4 cup
- Mint leaves-2 tbsp
- Bread slices-2
- Rice flour-2 tbsp or as required
- Cumin powder-1 tsp
- Lemon juice-1 tsp
- Chaat Masala-2 tsp
- Garam Masala-1 tsp
- Salt-As required
- Oil-As required
Slice paneer/cottage cheese into tiny cubes and mash them using hands.
Boil and peel a potato and mash well.
Soak the bread slices in water for a minute or two. Squeeze any excess water and mash well.
In a mixing bowl, add mashed paneer, potato, mashed bread, chopped onions, green chillies,coriander leaves, mint leaves, salt, cumim powder, chaat masala, garam masala, salt, lemon juice , rice flour and knead into a smooth dough.
Add more rice flour if the dough looks wet.
Meanwhile, Heat oil in a non-stick tawa.
Make small balls out of the dough and flatten each of them onto your palm and gently flatten using your other palm or fingers.
Place the tikkis on the tawa and cook until golden brown on both sides.
Serve hot with mint chutney or tomato ketchup.

- You can use the patties for your homemade burgers/wraps.
