Healthy yet yummy rajma tikkis
Rajma aka Red Kidney Beans are a good source of dietary fiber, protein, vitamins and iron. Having low glycemic index, red kidney beans help maintain healthy blood sugar levels.They also form a great source of protein for non-meat eaters. They are loaded with disease fighting antioxidants that help boost immunity. Apart from regulating bowel movement and reducing the risk of cardiovascular diseases, red kidney beans help maintain healthy skin.
There are several ways of including red kidney beans in your diet. It can be boiled and had as is or can be included in vegetable salads. Rajma masala/gravy, a popular dish from North India involves cooking red kidney beans in tomato-onion gravy with spices.Rajma tikkis/patties is a very light snack that is low on fat. Mashed red kidney beans are made into patties and shallow fried on tawa. It can be had with green chutney & sweet chutney or tomato ketchup.
- Boiled Rajma/Red kidney beans-1 cup
- Bread slices-4
- Onion -1
- Green chillies-2
- Coriander leaves/cilantro-1/2 cup
- Ginger Garlic paste-1 tsp
- Cumin powder-1 tsp
- Garam masala-1 tsp
- Chaat masala-1 tsp
- Lemon juice-1 tsp
- Salt-As required
- Oil-As required
Soak rajma in water for 5-6 hours and boil with little salt.
Boil and peel the potato and mash it nicely.
Crush the bread slices using hands.
Grind the rajma coarsely in a mixie/food processor or mash it nicely using a masher.
In a bowl, add the mashed rajma, potatoes, crushed bread slices,chopped onions, green chillies, coriander leaves,cumin powder, garam masala, chaat masala, salt, lemon juice and mix well into a smooth dough.
Make small balls and flatten it into small tikkis/patties.
Refrigerate the tikkis for 15-20 minutes.
Heat oil on a non-stick tawa and allow it to spread uniformly.
Place the tikkis on the tawa and cook until golden brown on both sides.
Serve hot with mint/sweet chutney or tomato ketchup.
