Herbed Chicken Mayo Sandwich

Simple and easy to make herbed chicken mayo sandwich

 
Have some left over chicken from briyani? or few pieces of chicken stocked up in the freezer ? All you need is few slices of bread, Mayonnaise and pasta seasoning to make a simple yet yummy sandwich.

My mom badly wanted to get rid of the chicken stocked in the freezer and was not in a mood to make a gravy/fry. That’s when i came up with the idea of a sandwich as she was racking her brain to make a snack for the evening. Plus chicken is the only meat i eat and i’am always a big fan of chicken mayo sandwiches. I made the sandwich using minimal ingredients. You can customize it according to your liking.

 

Required Ingredients:
  • Shredded Chicken-1 cup
  • Capsicum-1
  • Garlic-2
  • Chilli flakes/Dry red chillies-3
  • Butter-2 tsp
  • Salt-As required
  • Pasta Seasoning-2 tsp
  • Mayonnaise-3 tbsp
  • Bread-2 slices
Method:
  1. Shred the boiled chicken in a mixie and keep it aside
  2. Grind garlic cloves and dry red chillies in a mixie.
  3. Heat a tawa/utensil and add butter.
  4. Once the butter melts add the garlic-chilli paste and saute well until the raw smell goes off.
  5. Now add capsicum and saute
  6. Once the capsicum is cooked ( do not overcook the capsicum. Make sure it is a bit crunchy), add the shredded chicken and saute well.
  7. Add salt, pasta seasoning and mix well.
  8. Turn off the stove and let the chicken cool for sometime.
  9. Now add mayonnaise to the chicken and mix well.
  10. Spread it on a slice of bread and close with another slice. You can sprinkle black pepper powder if you like your sandwich spicy.
  11. Toast it on a tawa or on a toaster/grill and serve with tomato sauce.
Notes:
  • You can add shredded cheese or top it with a slice of cheese.
  • In case of chilli flakes you can added 2 to 3 teaspoons.
  • I used pasta seasoning brought from the stores. You can add any herb of your choice and customize.
