Sabudana/ Sago Vadas Recipe
I happened to visit this place called Amdavadi in T nagar, Chennai. Its basically a Gujarati snack house with a lovely ambiance and amazing food. Sabudana/Sago vada is a traditional deep fried snack from Maharashtra, India. The people at the restaurant suggested it as it happens to be one of their signature dishes and also the most sought after snack item by the regulars. The vadas were served with spicy green (mint) chutney and tangy sweet chutney. I have had sabudana vadas earlier but trust me the one i had at Amdavadi was undoubtedly the best. Every bite of it was truly authentic and yummy. One of my mom’s friends shared the following recipe with me and though i couldn’t achieve the same taste as that of Amdavadi (i definitely will ask them for the recipe next time i dine there :D), it was too good for a first attempt.
- Sabudana/Sago- 200 gms
- Potato-2 medium
- Peanuts-1/2 cup
- Coriander leaves-1/2 cup
- Green chillies-3
- Cumin/Jeera powder-2 tsp
- Lime juice-1 tsp
- Salt- As required
- Sugar-1/2 tsp
- Rice flour(optional)-2 tsp
- Oil- To fry
- Soak sabudana in water for 4-5 hours.
- Roast peanuts in tawa and grind it coarsely.
- Boil and peel the potatoes and mash them nicely.
- In a bowl mix sabudana, powdered peanuts, mashed potatoes, Coriander,Green chillies,cumin powder, sugar,rice flour and mix well.
- Add salt as required and add 1 tsp of lime juice and mix well.
- Make small balls out of the dough made above and flatten it on your palm into round vadas.
- Fry the vadas in oil until golden brown.
- Serve hot with mint/sweet chutney or tomato ketchup.
- Do not soak the sabudana/sago pearls for more than 5 hrs as it would turn soggy.
- You can add a pinch of chat masala or dried mango powder as per your liking.
